DesignRchic's Low-Calorie Parfait

I had my mom over for dinner tonight (after being inspired by LisaK's latest blog). Since we're both making every effort to eat healther I made a great shrimp stir-fry with Uncle Ben's Whole grain Brown rice. BUT of course you've got to have dessert right?! So I had an idea to make my own version of a parfait. Here's the ingredients and instructions:

Ingredients
1 snack sized container of Fat-Free Jello Pudding Snack Tapioca (100 calorie pack)
2 Large Strawberries chopped
1/2 cup of fresh blueberries
1 TBSP of Sugar-Free Cool Whip

Instructions
Pour half of the blueberries and 1 chopped strawberry at the bottom of your glass
Scoop in your Fat-Free Jello Pudding Tapioca
Pour the rest of the blueberries and 1 chopped strawberry on top
Scoop 1 TBSP of Sugar-free Cool Whip
Add a half strawberry as garnish!

Serving size 1
Calories: 165
Fat: 0

Yummy!! I'm really happy to hear that DesignR. Another thing I do is any time my husband leaves the house/condo..my last words to him are, I love you. Because, I would hate to look back and think the last words he heard were drive careful. I say that before the I love you. Also, my last words to all my family members are, I love you...every single time. I'm just really happy Lisa inspired you. Once you open your heart other people become comfortable with it too..and everyone is happy. And, I'm not just talking to you DC.

LisaK, I'm sooooo happy & grateful you brought this subject up, yesterday. It's soooo very important.

Not to get on a soap box, but you really should. When my mom got cancer, they did not know at first that's what it was. She started getting sick in July and by the time they figured out it was cancer she died less than two weeks later on September 20. It was all so sudden and such a shock. I felt I had so much more I wanted to share with her and then she was just gone. So treasure every moment you get with her. (I always get sappy in March -- because of my dad dying and it is also my mom's bday this month)

this parfait looks wonderful... but i'm going to wait until it's warmer outside to try it. it seems like a delicious spring/summer dessert. and so low calorie and healthy! thanks! by the way. i'm just curious. which is better? cool whip fat free or sugar free? is there a difference?

I will Lisa. My dad passed away in March last year, and my mom's been the source of my strength. I've neglected her at times, and as I'm getting that motherly instict, I find myself thinking about her more and calling her more.

crispysugar, It's COLD up here in MA!!! To my suprise, I actually got really good looking strawberries and blueberries. With the cool whip, I guess it depends on your preference. Some people don't like the taste of artificial sweeteners, so they choose the fat-free. I actually picked up the first thing I saw on my way home this evening Smiling

looks great..

we do the cheaper version and use the instant sugar free pudding mix (choclate or vanilla or banana or a combo, then layer bananas and crumble sugar free low cal cookies or graham crackers between the layers of pudging and whip cream..

always good.. who needs a sundae when you can have what you made above.. strawberries! YUM!
